#2TN Cooks: Detox Broccoli Cheese Soup
After visiting friends in California this weekend, our house was in need of a little diet-reset. I had all the delicious Mexican food, all the chocolate chip cookies, and all the wine my little heart desired. It was incredible while it lasted, but my body was craving something green by Sunday evening. So, cue my search on Pinterest for some healthy recipes.
I stumbled across this recipe for detox broccoli cheese soup from Pinch of Yum which sounded amazing for the simple fact that it sounded detox-y, but also indulgent a la my favorite order at Panera Bread. In other words, a happy medium and re-entry into healthier eating this week.
You guys. This soup is so good. You will not be disappointed. And although it’s a broccoli “cheese” soup, it’s dairy free which is a nice little ninja mind-trick.

Just a quick note that I roasted the broccoli in the oven at 400 degrees for 20-25 minutes before I added it to the soup mixture, and I took the author’s note of adding pesto at the very end = killer combo. Also, because I have a tendency to drench everything in hot sauce, I added a heavy dose of Louisiana hot sauce at the end upon serving.
